Lime tart

Lime tart is a refined combination of delicate shortcrust pastry and refreshing sweet-sour filling. This dessert is inspired by the Italian tradition of light and elegant pastries, where citrus plays an important role. Lime adds brightness to the flavor, while the creamy texture of the filling makes it uniquely tender. The crunchy crust contrasts with the softness of the cream, creating harmony in every bite. It is perfect as a refreshing dessert after a hearty dinner or alongside a cup of aromatic coffee. This tart can be decorated with powdered sugar or lime zest to emphasize its sophistication and freshness.

1
Preheat the oven to 180 degrees. In a bowl, mix butter and 60 g of sugar with a mixer, add 1 egg, beat, then add flour and knead until smooth. You will get a dense shortcrust pastry that should be evenly spread in a greased form, remembering to shape the edges.

Prick the dough with a fork and weigh it down (cover the dough with foil or baking paper and sprinkle beans or rice on top). Bake for 10 minutes at 180 degrees, then remove the weight and return to the oven for another 5 minutes. Let the finished crust cool.

Grate the lime zest and squeeze out the juice. For the filling, mix all the ingredients with a mixer: 3 eggs, lime juice and zest, 75 g of sugar, and cream. Pour the resulting mixture into the prepared crust and bake for 30-35 minutes at 160 degrees. The filling should be firm. The cooled tart can be dusted with powdered sugar when serving.
