Beat the yolks with sugar until white.
- Egg yolk: 3 pieces
- Sugar: 3 tablespoons

We add mascarpone cheese to the whipped yolks.
- Mascarpone cheese: 500 g

We brew strong espresso and add rum to it.
- Espresso: 1 glass
- Dark rum: 2 tablespoons

We dip the savoiardi cookies in the cooled coffee (very quickly, so the cookies don't get soggy), placing them tightly in a row in the dessert container.
- Savoiardi cookies: 400 g

Cover the savoiardi with cream about one centimeter thick.
- Mascarpone cheese: 500 g

On the layer of cream, add another layer of coffee-soaked savoiardi and cover with cream on top.
