Cut the room temperature butter into small cubes, sift the flour with salt. Add the butter and rub until crumbs form. Mix water with lemon juice and gradually add to the dry mixture. Knead the dough, roll it into a ball, cover with film, and refrigerate for 20-30 minutes.

Wash the apples, peel them, and cut each half into 5 pieces. Drizzle with a little lemon juice, add sugar and starch. Mix thoroughly.

- Starch: 1 tablespoon

Divide the dough in a ratio of 2/3. Roll out the larger part. Place it in a 22 cm mold, prick the bottom with a fork all over. Lay out the apples, cover with the remaining rolled-out layer of dough. The edges should be twisted, and a hole made in the center. Break an egg and lightly beat it, brush the top of the pie. Optionally, you can sprinkle with sugar.

Place in a preheated oven at 180 degrees and bake for 50-60 minutes. The pie should cool before serving, as the filling may leak.
