In a large bowl, place sugar and lemon zest and rub with your hands until the sugar becomes moist and fragrant. Then add the yolks and beat with a mixer until the mixture thickens and turns light in color (about 5 minutes). Add vanilla extract, then the cheese passed through a sieve, and semolina. Mix everything well and set aside.

Peel the pears, remove the core, and slice thinly. Cover with a damp cloth and set aside.

In a small bowl, beat the egg whites with salt and lemon juice until stiff.
