Gozinaki (Walnuts with honey)

Gozinaki is a traditional sweet treat with roots in ancient times. They are widely found in Georgian and Armenian cuisine but have become popular throughout Europe over time. This recipe uses the classic combination of walnuts and honey, creating a unique flavor: the nutty richness harmonizes with the caramel sweetness of honey. The crunchy slices of gozinaki melt in your mouth, leaving a soft aftertaste with light notes of rustic warmth. Place the cleaned nuts in a hot pan and fry, stirring and watching to prevent burning. Then slice the nuts thinly lengthwise with a sharp knife.
- Walnuts: 500 g

Pour honey into the pan and continuously stir while boiling until it thickens (a drop placed on a saucer should not spread). Add sugar. Pour chopped nuts into the boiling honey and stir continuously to keep them crunchy and prevent burning.
- Honey: 200 g
- Sugar: 1 glass

We take a clean wooden board, moisten it with water, smooth it with a wet spoon, then roll it out with a damp rolling pin, shaping it into a flat plate (about one and a half cm or 1 cm thick).

Let it cool slightly and cut into small diamonds with a hot sharp knife.
