Tiropita (Greek pie with feta cheese and herbs)

Tiropita is a traditional Greek pie where thin, crispy phyllo dough combines with a delicate filling of feta cheese and aromatic herbs. The roots of this dish run deep in the history of Mediterranean cuisine, where cheese pies were a symbol of hospitality. The exquisite taste of tiropita is a balance of salty feta, the spiciness of garlic and chili pepper, along with the freshness of herbs that give the pie a rich aroma. It can be served as an appetizer or main dish, complemented by sauces or fresh vegetables. The layers of dough soaked in cream and egg create softness inside and an appetizing golden crust outside. First, take 2 layers of dough (one package is 500 grams — usually just 2 layers) and roll them out (on a surface sprinkled with flour). Adjust the sizes to fit the shape in which you will bake the pie.
- Yeast-free puff pastry: 0.5 kg

Place the rolled-out dough in a preheated oven at 200 degrees for 10 minutes (the dough should rise about 5-6 cm).

While the dough is in the oven, we chop the onion, garlic, and chili pepper. We sauté everything together until the onion turns golden.
- Onion: 1 head
- Garlic: 3 cloves
- Chili pepper: 3 pieces

Chop the greens coarsely (cilantro, parsley, dill — whatever you like).
- Parsley: 1 bunch
- Chopped cilantro (coriander): 1 bunch
- Dill: 1 bunch

Then we mix the greens and sautéed vegetables. We stir.

Add pieces of brynza (better to break it by hand into small parts), cream, and two eggs to the obtained mass. Mix well.
- Feta cheese: 300 g
- Cream 20%: 30 ml
- Chicken egg: 2 pieces

When the dough has increased in volume, take it out of the oven and divide each layer into 2 parts. There should be layers.

In the baking form (previously lined with parchment paper and lightly greased with oil), we place the first layer of dough. On top of it, we lay one third of the cheese-vegetable mixture.

Then place the second layer on top and repeat the action with the filling; after that, do it once more. The last, fourth layer is brushed with egg yolk, sprinkled with sesame seeds, and sent to an oven preheated to 180 degrees for 20 minutes.

Take out the ready pie, let it cool a bit, and cut it into small portions.
