Vegetarian Pie "Veggie"

45 minutes
The vegetarian pie 'Veggie' is a harmony of fresh vegetable flavors encased in delicate dough with a hint of rosemary. Its roots lie in European cuisine, where the balance of natural ingredients and simplicity of preparation are valued. This pie features the rich taste of eggplant, the juiciness of tomatoes, and the tenderness of cauliflower, complemented by herbs and light spices. It is perfect as a light snack for family dinners or cozy gatherings with friends. The thin dough does not overpower the filling's flavor but enhances it, creating a delicate yet rich texture. Suitable for those following a plant-based diet who want to enjoy the robust taste of traditional baked goods. It can be served as a standalone dish or with a light salad to highlight the freshness of each ingredient.

1
Preheat the oven to 150 degrees. Stew the vegetables in water all together (except for tomatoes and olives).
- Eggplants: 1 piece
- Cauliflower: 1 head
- Sweet pepper: 1 piece
- Water: 1 glass
2
While the vegetable mixture is cooking, we start on the dough. In a bowl with high sides, sift the flour, add salt, baking powder, and rosemary. Pour in the oil and mix. The main ingredient is water; add enough so that the dough can be kneaded (first with a spoon, then by hand) and, importantly, does not stick to the hands.
- Wheat flour: 1 glass
- Sea salt: pinch
- Dried rosemary: pinch
- Vegetable oil: 0.3 glass
- Water: 1 glass
3
Pour a little oil into the baking mold (any color and size), add the dough, and with a 'light motion of the hands,' try to shape it like a dish, spreading the dough across the bottom and edges of the mold.
- Vegetable oil: 0.3 glass

Place the prepared vegetable mixture into the dough mold, add herbs to taste. Enhance the beauty: add finely chopped tomatoes and mix with the filling, or place large slices on top.
- Fresh cilantro (coriander): 1 bunch
- Tomatoes: 2 pieces
5
This point is optional.. mix a little water with flour in a glass, and pour this mixture over the vegetable filling. This makes the filling uniform so that the pie pieces do not fall apart.
- Wheat flour: 1 glass
- Water: 1 glass
6
We put the pie in the oven and raise the temperature to 200 degrees.

After 20-30 minutes, we enjoy delicious vegetarian pastries.
