Knead the dough. Mix flour, softened butter, and 50 g of sugar.
- Wheat flour: 280 g
- Butter: 170 g
- Sugar: 230 g

Line the bottom of the springform with parchment.

Spread the dough and form the edges up to the top of the mold.

Prepare the chocolate layer. Break the chocolate into pieces, pour in the cream, and place in the microwave at full power for 1 minute. Remove and stir continuously to achieve a smooth consistency. Add the cognac. Chill in the refrigerator for about 5 minutes.
- Dark chocolate 60%: 230 g
- Cream 30%: 200 g
- Cognac: 1 g

Pour into the mold for the dough. Place in the freezer for 20 minutes. This is needed for the chocolate layer to 'set' and not spread when adding the cottage cheese filling.

For the cottage cheese filling, mix cottage cheese, 130 grams of sugar, eggs, starch, and vanillin with a mixer.
- Cottage cheese: 800 g
- Sugar: 230 g
- Chicken egg: 3 pieces
- Potato starch: 40 g
- Vanillin: pinch

Spread the cottage cheese filling over the chocolate layer. Smooth it out. Place in a preheated oven at 180 degrees for one hour.

Prepare the sour cream sauce. Mix the sour cream with the remaining 50 grams of sugar and set aside until the sugar is completely dissolved.
- Sour cream: 250 g
- Sugar: 230 g

After an hour, take the cake out of the oven (do not turn off the oven) and pour the sour cream sauce over it.

Place in the oven for 10-15 minutes. Remove, let cool completely, and sprinkle with cocoa powder.
