French Onion Pie

French onion pie is a true embodiment of simplicity and elegance in French cuisine. We pour flour into a mound on the table and make a well in it. We cut butter into cubes and mix it with the flour, then crack 2 eggs into the mixture of flour and butter and add salt and water. We knead the dough until smooth. It should not crumble but should break easily. We wrap it in plastic wrap and place it in the refrigerator for 30 minutes.
- Butter: 100 g
- Chicken egg: 4 pieces
- Wheat flour: 450 g
- Salt: to taste
- Water: 6 tablespoons

While the dough is in the fridge, we prepare the filling. For this, we cut the onion stems into rings or half-rings, except for the green part, of course, but it's better not to use the greenest stems. Then we sauté the prepared onion in a heated pan with vegetable oil until soft, season with salt to taste, and set it aside.
- Leek: 500 g

We turn on the oven; while we prepare the filling, it should heat up to 180 degrees.

We break 2 eggs into a bowl, add cream and grated cheese, and mix everything.
- Chicken egg: 4 pieces
- Cream 20%: 300 g
- Poshekhonsky cheese: 300 g

Now we grease the mold with butter and sprinkle it with flour so that the buttered part is lightly dusted with flour. Then we place the dough in there, carefully stretching and spreading it in a thin layer across the mold, making low edges. After that, we add the onion and pour the mixture of eggs, cream, and cheese evenly.

Place in the oven and bake for 35 minutes. The pie should brown nicely!
