Puff pastries with goat cheese, cherry tomatoes, and rosemary are an exquisite dish of Russian cuisine that combines the airy texture of the dough with the rich creamy flavor of the filling. The origins of such pastries trace back to European culinary traditions where puff pastry is often used to create elegant appetizers. Goat cheese gives the pastries a delicate creamy consistency with a slight tanginess, while tomato paste and fresh cherries add juiciness and a subtle acidity. Rosemary completes the composition with its spicy aroma, making the pastries an ideal complement to a glass of white wine or herbal tea. These pastries can be served both at festive tables and as a refined snack that awakens gastronomic emotions.

1
Frozen puff pastry can be used. Roll out to a thickness of 4 mm. Cut into rectangles or squares. Place them on a baking sheet lined with parchment paper, leaving some space between each.

Spread the blanks with tomato paste (better to use homemade). Add salt and pepper to taste.
- Tomato paste: 4 tablespoons
- Salt: to taste
- Ground black pepper: to taste

Bake in an oven preheated to 180 degrees for about 20 minutes (watch for the edges to rise).
