60 minutes
Delicate thin pancakes are a true embodiment of Russian traditions. This recipe reflects a centuries-old love for airy pastries, where each ingredient plays its role in creating the perfect texture. Egg whites give the batter lightness, while butter makes it soft and fragrant. The thinnest pancakes, almost transparent with a light golden crust—they seem to melt in your mouth. They can be served with honey, jam, or sour cream, turning every morning into a small celebration. These pancakes are perfect for family breakfasts as well as traditional feasts since their taste is a harmony of tenderness and comfort. They embody the very soul of Russian cuisine—simple yet exquisite.

1
Melt 3 tablespoons of heaped butter in an enamel pot over low heat to prevent the butter from boiling.
- Butter: 3 tablespoons
2
Break 4 eggs and separate the whites from the yolks.
- Chicken egg: 4 pieces
3
Whisk the yolks with melted butter until smooth.
- Butter: 3 tablespoons
4
Add 1-2 tablespoons of powdered sugar to the mixture (the amount depends on your sweetness preference). Regular sugar can be used, but the powder dissolves more easily, resulting in a very tender dough. Mix the ingredients thoroughly.
- Powdered sugar: 1 tablespoon
5
Add 2 cups of warm milk and stir again.
- Milk: 2 glasss
6
Slowly add flour to the resulting mixture while stirring it. The dough should be very liquid and, most importantly, without lumps.
- Wheat flour: 200 g
7
Final step: add 4 whipped egg whites and a small pinch of salt. Whip everything again until smooth — the dough is ready.
- Chicken egg: 4 pieces
- Salt: to taste

Heat the pan over medium heat, add a little oil for the first pancake. The pancakes need to be very (!) thin. From the second pancake onwards, you can fry without any oil, as there is enough butter in the batter to prevent sticking (but this depends on the pan, so if they start to burn, it's worth adding a little oil periodically). Sometimes they turn out so thin that they cook very quickly and don't need to be flipped.
- Vegetable oil: 1 tablespoon
