For the test, cut 250 grams of butter into flour (about 400 grams) and rub it with your hands, then add vanilla sugar (a pack - 30 grams) and baking soda, mix well. Then add two eggs and the egg white, and incorporate sour cream. Mix thoroughly. Knead the dough until it doesn't stick to your hands; add a little more flour if necessary.
- Butter: 400 g
- Wheat flour: 650 g

- Soda: 1 teaspoon
- Chicken egg: 2 pieces
- Egg white: 1 piece
- Sour cream: 250 g

Mix the remaining flour (200 grams) with butter (150 grams). Then add sugar and vanilla sugar, and mix.

Divide the dough into 3 parts. Roll each part out (about 3 mm thick) and evenly fill with filling. Roll it up and cut into small pieces.

Line the baking tray with parchment paper and place the gata on it. Brush the top with egg yolk mixed with milk. Bake in a preheated oven at 180 degrees until golden brown. Let it cool.
