Preheat the oven to 180 degrees. Prepare 12 small muffin molds.

Sift flour with cocoa powder, baking powder, and soda into a bowl. Add salt. In another bowl, mix kefir with sugar, add melted and cooled butter, vanilla essence, orange zest, and juice.
- Wheat flour: 190 g
- Cocoa powder: 2 tablespoons
- Baking powder: 2 teaspoons
- Soda: 0.5 teaspoon
- Salt: pinch
- Kefir: 150 ml
- Sugar: 100 g
- Butter: 20 g
- Vanilla essence: 0.5 teaspoon
- Orange zest: 1 tablespoon
- Orange juice: 100 ml

Combine both mixtures and add 2 tablespoons of chopped chocolate. Distribute the resulting mass into prepared molds, sprinkle with another 2 tablespoons of chocolate on top, and place in the oven for 25 minutes. Check readiness with a toothpick.
- Dark chocolate: 170 g

For ganache, place the remaining chocolate pieces in a bowl. Heat the cream and pour it over the chocolate. Wait a few seconds, then stir until the chocolate is melted. Add the butter cut into pieces. Cover with plastic wrap, pressing it against the surface of the ganache. Cool before use.
- Dark chocolate: 170 g
- Cream 30%: 80 g
- Butter: 20 g

Transfer the ganache to a pastry bag with a nozzle. Pipe onto the surface of the cooled muffins, creating a pattern. Decorate with orange jam and mint leaves.
