Mix flour with cocoa and sift.
- Wheat flour: 100 g
- Cocoa: 20 g

Separate the eggs into whites and yolks. Add 2/3 of the sugar to the yolks and beat with a mixer until thick, almost white mass is obtained.

Whip the egg whites to a strong foam, add the remaining sugar, and beat until a thick mass is obtained. Gently mix the whipped egg whites with the yolks.

Add the mixture of flour and cocoa, and gently mix.

Line the bottom of the baking pan with parchment, grease the sides with butter. Pour the batter into the pan and bake in a preheated oven at 200 degrees for 25 minutes. Check readiness with a wooden skewer (depending on your oven's characteristics, the baking time for the sponge may need to be slightly less/more).

Remove the baked sponge from the oven, cool for 10 minutes in the pan, then turn it onto a rack and let it cool completely.

Cut the sponge cake into three layers.

If desired, pierce each layer with a wooden skewer and soak with sweet water (1 teaspoon of sugar + 0.3 cup of water) or cognac. Spread cream on both sides.

- Boiled condensed milk: 0.5 jar

For the cream, combine boiled condensed milk, softened butter, and condensed milk, and whip until smooth.

Assemble the cake. Sprinkle the top and sides of the cake with crushed walnuts. Decorate as desired.
