Honey rings with lemon zest

Honey rings with lemon zest are delicate and fragrant cookies inspired by Irish culinary traditions. Honey gives the dough natural sweetness, while lemon zest adds a refreshing note. These rings are pleasantly crunchy on the outside but remain soft inside. Historically, the Irish valued simple yet flavorful recipes, and such cookies could be served with tea during cozy family gatherings. They pair perfectly with hot beverages and are especially good with herbal tea or coffee. The light aroma of lemon complements the depth of honey's flavor, creating a harmonious treat. They can be decorated with poppy seeds or dusted with powdered sugar for visual appeal and subtle sweetness. Baked to a golden crust, these rings become a true symbol of comfort and warm meetings.

1
Sift the flour and add a pinch of salt and baking powder.
- Wheat flour: 250 g
- Salt: pinch
- Baking powder: 0.5 teaspoon
2
The butter (fat) should be soft. We beat the butter with eggs. Add grated lemon zest, honey, and mix thoroughly. Gradually add flour and knead the dough. If the dough is sticky, it should be placed in the refrigerator for half an hour to cool.
- Fat: 80 g
- Chicken egg: 1 piece
- Lemon zest: 1 piece
- Honey: 70 g
- Wheat flour: 250 g
3
Prepare a large baking tray lined with parchment paper. Preheat the oven to 180 degrees.
4
Tear off small pieces from the dough, make strings, connect the ends to form a ring. Place the rings on a baking sheet, leaving a little space between them as they will rise slightly. The rings can be brushed with egg yolk and sprinkled with poppy seeds or simply dusted with powdered sugar (I prefer the second option).
- Chicken egg: 1 piece
- Powdered sugar: to taste

Bake until they darken. It took me 20-25 minutes. Remove the rings, let them cool on a rack, and then generously sprinkle with powdered sugar.
