Cheesecake with cream cheese and berries

12 servings

210 minutes

Cheesecake with cream cheese and berries is a classic dessert of American cuisine that has captivated gourmets worldwide. Its history dates back to ancient Greece, but the modern version emerged in the USA due to the development of the dairy industry. This cheesecake combines a fluffy cheese filling with a crunchy cookie base, while fresh berries add a light tartness that balances the sweetness. The creamy texture of cream cheese and the rich flavor of cream make it truly delicate. It can be served chilled, making it an ideal summer treat. The cheesecake doesn't require complex ingredients but its taste resembles desserts from the finest patisseries. It is perfect for cozy home tea gatherings as well as for festive occasions, consistently impressing guests.

Preheat the oven to 200 degrees. Blend half of the sugar into crumbs. Add softened butter and mix until smooth (by hand).

    Required ingredients:
    1. Sugar0.5 glass
    2. Cookies ""Jubilee""250 g
    3. Melted butter0.5 glass

Grease the bottom and sides of a removable baking pan with oil. Firmly pack the resulting mixture so that the bottom and sides of the pan are covered. It is important that both the walls and the transition between the walls and the bottom are quite thin (otherwise, there will be a lot of excess dough without filling, which will need to be trimmed for a tasty combination). Place in the oven and bake for 8 minutes. Allow to cool completely, then remove from the pan.

    Required ingredients:
    1. Vegetable oil1 tablespoon

Prepare the filling. Whisk the cream cheese with the second half of the sugar. In a separate bowl, whip the cream with lemon juice using a mixer. Gently fold the cream into the cheese mixture, mixing with light bottom-up movements.

    Required ingredients:
    1. Cream cheese300 g
    2. Sugar0.5 glass
    3. Cream 20%0.5 glass
    4. Lemon juice2 teaspoons

Place the filling in the cooled mold. Put it in the refrigerator for 3 hours.

Wash the berries, dry them, and place them on top. Put back in the fridge for 30 minutes. (You can actually use fruit pieces for decoration, but berries provide the necessary tartness for the right balance with the cheesecake's sweet flavor.)
