For the jelly, mix 2 tablespoons of sugar and 2 teaspoons of cornstarch in a small saucepan. Add pomegranate seeds, pomegranate juice, and lemon juice, and stir. Bring to a boil over medium heat and cook, stirring, for about 5 minutes. Pour into a small bowl. Cool while you prepare the pudding.
- Sugar: 0.3 glass
- Cornstarch: 1.5 tablespoon
- Pomegranate seeds: 1 glass
- Pomegranate juice: 0.7 glass
- Lemon juice: 1 tablespoon

For the pudding, mix milk and cream in a saucepan. Scrape the seeds from the vanilla pod (or add vanilla extract). Bring to a boil over medium heat. Remove from heat, cover, and let cool for 5 minutes.
- Milk: 275 ml
- Cream 30%: 75 ml
- Vanilla pod: 1 piece

Meanwhile, beat the egg, egg yolk, 1/3 cup of sugar, and 1.5 tablespoons of cornstarch in a medium bowl.
- Chicken egg: 1 piece
- Egg yolk: 1 piece
- Sugar: 0.3 glass
- Cornstarch: 1.5 tablespoon

Carefully introduce 1/3 of the milk mixture into the eggs while whisking. Then pour everything into a pot with heated milk and cream.
- Milk: 275 ml
- Cream 30%: 75 ml

Cook over medium heat, stirring constantly, until the mixture thickens, for 2 to 3 minutes. Remove from heat and add butter.
- Butter: 1 tablespoon

For the parfait, divide the pomegranate jelly among serving molds, filling each container to 3/4 full. Top with pudding. Cover each mold with plastic wrap and chill for at least 3 hours.
