For the dough, sift 250 grams of flour into a bowl and mix thoroughly with the yeast. Add the other ingredients for the dough (1 teaspoon of salt, 150 ml of warm water, 1 tablespoon of olive oil, 100 grams of grated Emmental cheese) and mix with a hand mixer for 2-3 minutes on low speed, then on high speed for 5 minutes until a smooth, homogeneous dough forms. Cover the dough and leave it in a warm place until it noticeably increases.
- Wheat flour: 250 g
- Dry yeast Dr.Oetker: 10 g
- Salt: 1 teaspoon
- Water: 140 ml
- Olive oil: 1 tablespoon
- Grated Emmental cheese: 200 g

Preheat the oven to 200 degrees and grease a baking sheet (40x30 cm) with oil.

Lightly sprinkle the dough with flour, remove it from the bowl, knead it again on a floured surface, and roll it out on the baking sheet.

For the filling, peel the apples, remove the seeds, slice them into thin rings, and distribute them over the dough on the baking sheet.
- Apple: 500 g

Slice the blue cheese and goat cheese, and distribute them over the apples. Sprinkle with the remaining Emmental cheese and pepper. Leave the pie to rise until the dough volume noticeably increases.
- Blue cheese: 125 g
- Goat cheese: 100 g

Place the baking tray in the oven at medium level and bake for about 30 minutes. After cooking, cut the baked goods into triangles and serve warm or cold with wine or beer.
