In a medium saucepan, bring cream, milk, and sugar to a boil.
- Cream: 200 ml
- Milk: 400 ml
- Sugar: 125 g

Whisk the egg yolks and, while continuing to whisk, slowly pour in the hot cream mixture. This step is called tempering the yolks.

Strain the mixture through a fine sieve and return it to the pot. Cook over medium heat until the mixture thickens enough to coat a spoon.

Cool the mixture in an ice bath, add rose water, and pour it into your ice cream machine.
