Apple, Raisin and Cinnamon Envelopes

Apple, raisin, and cinnamon envelopes are a true embodiment of French charm in home baking. Dice the apples into small cubes and place them in a bowl. Add raisins, sugar (to your liking, but better not to skimp - a quarter cup is definitely good). Sprinkle with cinnamon, mix, and let sit for 10 minutes.
- Red apples: 4 pieces
- Seedless raisins: 150 g
- Sugar: to taste
- Cinnamon: 2 teaspoons

Preheat the oven to 220 degrees.

Cut the dough into 8 squares.

Place the filling in the center. Seal two opposite corners diagonally, then the other two. Seal the remaining openings carefully (the puff pastry may open in the oven, so sealing must be done thoroughly!!!).

Brush the top with egg yolk.
- Egg yolk: 2 pieces

Place on a baking sheet lined with parchment paper and greased with oil.
- Butter: 1 tablespoon

Bake for 15-20 minutes until done. Let cool for 20 minutes under a towel. Serve.
