In a saucepan, mix 20% cream and 3/4 cup of sugar. Place over medium heat and warm, stirring constantly. Bring the cream to a boil and reduce the heat to low. Cook for another 3 minutes. Remove from heat. Stir in freshly squeezed orange juice without pulp. Cool down. Remove the film that forms on the surface of the cream mixture. Pour the mixture into dessert cups or bowls. Cover the cups with plastic wrap, avoiding contact with the surface. Refrigerate for 4 hours.
- Cream 20%: 2 glasss
- Sugar: 0.8 glass
- Freshly squeezed orange juice: 6 tablespoons

Whip 38% cream (or any other whipping cream) to a thick consistency, gradually adding fine white sugar. Add fresh lime juice and a tiny drop of food coloring. Fill a piping bag with the whipped cream and decorate the desserts.
