In a large bowl, beat the softened butter and sugar until white. Add the eggs one by one, then the mint extract. In another bowl, mix the flour, baking powder, and salt. Stir in 1 cup of crushed mint candies. Combine both mixtures and mix well - the dough will be thick.

Divide the dough in half and roll into 2 sausages. Place on a clean baking sheet and bake at 180 degrees for 25-30 minutes.

Cool for 15 minutes, transfer to a board, and slice thinly on the diagonal. Place on a baking sheet and bake for another 12-15 minutes. Transfer to a rack and cool.
