Apple-caramel fudge is a delicate and refined treat that comes from the depths of European culinary tradition. Its flavor is based on a harmonious blend of the tartness of Antonovka apples and the sweetness of caramelized sugar, complemented by the velvety texture of cream. This dessert is easy to prepare but possesses incredible elegance. The sweet-sour apple puree, carefully simmered with cream and sugar, transforms into an exquisite cream with a light caramel hue. This fudge can be served as an independent dessert, enhanced with nuts or cinnamon, or used as a filling for pastries and cakes. It is not just a sweet treat — it is a true gastronomic delight that awakens warm associations and cozy memories.

1
Remove the core from two medium Antonovka (or other unsweetened) apples, cut each into 4 pieces, and simmer in a small amount of water until soft.
- Antonov apples: 2 pieces
2
Peel the ready apples (they come off very easily) and mash them into a puree with the remaining water.
3
Add cream and sugar to the puree and, stirring constantly, simmer until it thickens to a cream-like consistency. Cool down.
