For the test, add salt and 70 grams of oil to the water. Bring to a boil, reduce the heat, gradually add all the flour, and mix well. The dough should be uniform and easily come away from the sides of the pot. Remove from heat, let it cool slightly, and add the eggs one by one, mixing well after each.

Preheat the oven to 180 degrees, line the baking tray with parchment paper. Using a pastry syringe (if not, you can use a dessert spoon: before scooping the dough, dip the spoon and fingers in warm water to prevent sticking, and you can create a decorative pattern on the pastry with your fingers), pipe small balls onto the tray about 3 cm apart. Then send them to the oven until golden-brown.

For the cottage cheese cream, beat the cottage cheese with 200 grams of butter and a cup of sugar. You can add vanillin.

For the apple filling, cut the apples into small cubes or slices. In a heated pan, melt 30 grams of butter, add the apples, and mix well. After a few minutes, add a quarter cup of sugar and cinnamon. Fry, stirring well, until the apples become soft.

Take the pastries out of the oven, let them cool slightly, cut them in half (not all the way through). Fill the bottom part with cottage cheese cream, place apples on top, and cover with the upper part. Optionally, sprinkle with powdered sugar.
