Plum tart Tatin is an exquisite French dessert with a rich history. The classic tart Tatin was created accidentally by the Tatin sisters, and the plum version is its vibrant and aromatic interpretation. We are defrosting puff pastry.
- Puff pastry: 1 piece

We wash the plums, cut them in half, and remove the pits.
- Plums: 900 g

In a pan, we make caramel: cut the butter into cubes, melt it, add 4 tablespoons of sugar, and stir until caramel forms (leave 3-4 cubes to place on the plums under the dough).
- Butter: 70 g
- Sugar: 4 tablespoons

Pour the caramel into a silicone mold, place the plums upside down on top. Add 3-4 cubes of butter on the plums.

We cover with dough and tuck it under the fruits.
- Puff pastry: 1 piece

We poke the dough with a fork everywhere possible and send it to the oven for 35-40 minutes at 190 degrees.

After the dough is baked, we take out the pie and flip it onto a plate larger in diameter than the baking dish.
