Mix water, flour, add egg and yeast. Knead the dough.
- Water: 600 ml
- Wheat flour: 1 kg
- Chicken egg: 1 piece
- Dry yeast: 11 g

Place the prepared dough in the refrigerator for an hour.

Boil the potatoes and let them cool. Pass the potatoes and cheese through a meat grinder. Form balls.
- Potato: 1 kg
- Homemade cheese: 1 kg

Take a piece of dough, knead it a little, form a ball, pinch it like a pie, and roll it out thinly, slightly larger than a pancake. Place the rolled khichin on a hot skillet (without oil!), and fry on both sides until golden brown.

Place the ready khychin on a plate and brush both sides with butter.
