Peel and core the apples, then chop them finely to make 1.5 cups.

Place the apples in a microwave-safe bowl and microwave for about 5 minutes on high power until the apples are soft. Drain excess liquid and lightly mash the apples into small pieces, but do not turn them into a puree. Cool down.

In a small bowl, mix apples, nuts, crumbled cheese, thyme, and honey.

Preheat the oven to 200 degrees.

On a floured surface, roll out the dough and cut out 24 squares approximately 8x8 cm.

Lightly beat the egg.

Brush the edges of each square with egg and place about a teaspoon of filling in the center. Fold the edges of the squares to form triangles and pinch the edges tightly (you can also pinch with a fork).
