In a saucepan, mix vinegar, water, sugar, anise, cinnamon, allspice berries, sliced lemon peel, cloves, and juniper berries. Bring to a boil.
- White wine vinegar: 1 l
- Water: 0.5 l
- Cane sugar: 500 g
- Anise (star anise): 3 pieces
- Cinnamon sticks: 1 piece
- Black allspice: 1 tablespoon
- Lemon: 1 piece
- Carnation: 5 piece
- Juniper berries: 2 teaspoons

Meanwhile, peel the pears, leaving the stems, and place them in the boiling marinade. Reduce the heat, cover, and cook for 10-15 minutes until soft. Transfer the pears to a dish.

Return the marinade to the heat, bring to a boil, and cook for another 4-5 minutes until the liquid slightly evaporates and thickens.

Place the pears in 2 sterilized 1.5-liter jars, pour in the marinade, and distribute the spices between both jars. Add a sprig of rosemary to each jar. Seal tightly.
