Pour sugar into the pan and place it over medium heat. Use a brush to coat the sides of the pan with cold water, without stirring the sugar. Repeat until the sugar caramelizes (you may only need a third of the water).

Pour in the remaining water and add coffee beans, cocoa, salt, and crushed chocolate. Bring to a boil.
