Chop the nuts slightly and transfer them to a bowl.
- Roasted walnuts: 320 g

In a small saucepan, bring cream, instant coffee, and salt to a boil. Then add honey, bring to a boil again, reduce heat, and simmer, stirring occasionally with a wooden spoon, for 15-20 minutes until reaching 125 degrees. Remove from heat.
- Cream 40%: 1 glass
- Instant espresso: 1 tablespoon
- Sea salt: 0.5 teaspoon
- Honey: 330 g

Pour the caramel over the nuts and mix well. Chill for 10-15 minutes in the refrigerator until the caramel thickens slightly. Mix again.
- Roasted walnuts: 320 g

Spoon small mounds onto a baking sheet lined with parchment or greased paper. Let cool in a cool place.
- Honey: 330 g

You can pour the caramel in an even layer onto the prepared tray without letting it cool. Let it set, cut into rectangles, and wrap in parchment like candies.
