Mix flour with white and vanilla sugar and salt. Add 115 g of butter cut into small pieces and mix well with a fork. Incorporate an egg and ice water with a fork until the dough is pliable. Form a ball from the dough, cover with plastic wrap, and refrigerate for an hour.

- Sugar: 1 teaspoon
- Vanilla sugar: 2 teaspoons
- Salt: 0.3 teaspoon
- Butter: 130 g
- Egg yolk: 1 piece

Preheat the oven to 200 degrees.

Filling: Mix brown sugar with cinnamon and ginger.

Grease a baking pan (22 cm) with butter and line the bottom with parchment paper. Spread the dough on the bottom and sides of the pan and return it to the fridge. Peel the apples and remove the cores. Cut into slices about 0.7–1 cm thick. Drizzle with lemon juice. Arrange the apples on the dough, sprinkle with the sugar mixture, and place the remaining butter on top.

Bake in the lower third of the oven for about 40 minutes. Slice the cheddar thinly and place it on the pie, then bake for another 10 minutes. Remove and cool at room temperature.
