In a bowl, lightly beat the egg white. Add lemon juice, mix, and gradually incorporate powdered sugar to form a pliable dough. Add mint extract and mix.

Divide the dough into 2 parts and add some red dye to one and green to the other.
- Food coloring: to taste

Sprinkle the work surface with a little powdered sugar. Place the dough separately or on top of each other and roll it out. Cut out shapes with cookie cutters and place them on a parchment-lined baking sheet. Leave to dry.
