Peel the quince, remove the insides, and cut into cubes about two centimeters in size. The size is approximate. Cut as you like, but not too large.

Pour the chopped quince with water mixed with lemon juice, add a cinnamon stick and a vanilla pod, previously gutted, into the pot with water and quince. Also add sugar and grated ginger. Place on the heat and bring to a boil. Reduce the heat to low and cook for another twenty minutes.

After that, remove the quince with a slotted spoon, dry it on paper towels, heat the clarified butter in a pan until boiling, and fry the quince in this butter until a delicious crust forms. Place on plates, top with pieces of ice cream, and serve before the ice cream melts.
