Mix frozen cherries with a pinch of salt, 1/4 cup of sugar, cornstarch, cinnamon, and port wine in a heavy two-liter pot. Place over medium heat and cook, stirring occasionally, until the sugar is completely dissolved (about 3 minutes).

Pour the cherry mixture into a glass or ceramic baking dish (about 23x23 cm) or into small portion molds.

Mix flour, 2 teaspoons of sugar, baking soda, baking powder, and salt in a bowl. Add one and a half tablespoons of cold butter and knead the mixture thoroughly by hand or with a blender. The butter should be fully absorbed.
