Grease an 18x28 cm baking dish with butter and line it with baking paper. Mix sugar, syrup, honey, 3 tablespoons of water, and 0.25 teaspoons of salt. Heat over low heat until fully dissolved. Bring to a boil and cook for 8 minutes until the mixture hardens when dropped into cold water, or when the syrup reaches 122 degrees.
- Sugar: 500 g
- Glucose syrup: 250 g
- Honey: 175 g
- Vanilla extract: 1 teaspoon
- Butter: 125 g

Whip the egg whites into a stiff foam with a mixer. Gently pour in a quarter of the syrup and continue whipping for 5 minutes. Heat the remaining syrup for 2 minutes until it reaches 157 degrees, and slowly add it to the egg whites while constantly whipping.
- Egg white: 2 pieces
- Glucose syrup: 250 g
- Honey: 175 g

Add vanilla and butter and beat for another 5 minutes, then add almonds and cherries, mixing with a wooden spoon. Spread the mixture on a baking sheet and level it. Chill for 2 hours until set. Place on a board and cut into small squares. Wrap each piece in cellophane and store in the refrigerator.
