Pour 500 ml of champagne into a bowl and let the gases escape. Sprinkle the gelatin but do not stir. Allow it to swell. Pour the remaining champagne into a pot with sugar and zest, heating slowly while stirring occasionally for 3-4 minutes until the sugar dissolves.
- Dry champagne: 1 l
- Gelatin: 1.5 tablespoon
- Sugar: 250 g
- Lemon zest: 4 pieces
- Orange zest: 4 pieces

Remove the pot from the heat, add the mixture with gelatin, and stir until dissolved. Let it cool, then remove the zest.

Place the berries in 8 wine glasses and pour the jelly. Refrigerate for 6 hours or overnight. Remove from the fridge 15 minutes before serving.
