For the test: sift flour, a pinch of salt and mustard, then rub in 50 g of butter. When the dough resembles bread crumbs, add 40 g of grated cheddar and 1-2 tablespoons of cold water. Knead well. Place the dough in a plastic bag and refrigerate for 30 minutes.

For the filling: melt 50 g of butter in a pot, add chopped onion, and stir. Without covering, sauté the onion over medium heat for 30 minutes until dark brown. It is important for the onion to turn dark brown, as it affects the pie's flavor.

Roll out the dough, place it in a greased form, prick with a fork, and bake in the oven at 180 degrees. After 15 minutes, take it out, brush with a little beaten egg, and put it back in the oven for another 5 minutes.

Place the onions in the pastry, beat the remaining eggs with cream and a little salt and pepper, and gradually pour the mixture over the onions. Sprinkle with 1 tablespoon of cheddar, place in the oven, and bake until the filling is puffed and golden-brown, about 30 minutes.
