A true symbol of gastronomic pleasure, it offers moments of pure happiness in every bite.

1
Grease the inside of 6 metal rings (diameter 5 cm, height 4-5 cm) with oil. Line each mold with non-stick baking paper, so it is slightly higher than the rings. Place them on a baking tray lined with baking paper.
2
Whisk the eggs in a bowl, then add the yolks and sugar, whisk again to achieve a uniform consistency.
- Chicken egg: 2 pieces
- Egg yolk: 2 pieces
- Sugar: 120 g
3
Place a bowl over a pot of boiling water and melt finely chopped chocolate and unsalted softened butter in the bowl. Remove the bowl from the pot and gently stir the chocolate. Cool for a minute or two, then pour the chocolate into the egg mixture, stirring constantly. Add the sifted flour and whisk well to avoid lumps. Chill for 30 minutes.
- Dark chocolate 70%: 90 g
- Butter: 90 g
- Wheat flour: 45 g
4
Spoon the mixture into metal rings, filling them about two-thirds full. Place in the refrigerator for 3-4 hours.
5
Preheat the oven to 180 degrees.
6
Place the fudge to bake in the center of the oven for 10 minutes. Remove from the oven and let cool for 2 minutes, then carefully remove the rings and gently separate the fudge from the paper. Transfer the fudge to small plates with a spatula, trying not to shake them as they are very fragile. Serve immediately.
