Put sugar in a pot with water. Heat the mixture and keep it on low heat until the sugar dissolves, then bring to a boil and simmer for about 5 minutes. Add juice from 4 limes and let it cool.
- Sugar: 200 g
- Water: 200 ml
- Lime: 4 pieces

Cut the watermelon flesh into pieces, removing the seeds. Place it in a food processor and blend well with 100 milliliters of gin. Add the chilled syrup and blend again in the processor. Pour into a freezer container. Place in the freezer for 2 hours to let it almost freeze.
- Watermelon: 3 kg

Take out of the freezer and break the ice crystals with a fork. Return to the freezer and let it freeze completely.

Pour the resulting granita with the leftover gin. Serve with lime wedges and cookies.
