Heat the milk in a pot, just below boiling, then set aside to cool for a few minutes.
- Milk: 300 ml

Put the yolks and sugar in a bowl and whisk into a fluffy foam. Gradually add the chilled milk. Rinse the pot, return it to the heat, and cook on low for 5 minutes, stirring until the mixture thickens. Set aside and let it cool completely.
- Egg yolk: 3 pieces
- Sugar: 150 g
- Milk: 300 ml

Place pitted cherries in a pot of water. Cook over medium heat for 5 minutes. Blend the cherries in a blender or food processor and set aside.
- Cherry: 400 g

Mix the puree with the egg cream, add cream and sour cream, pour into a freezer container. Freeze for 1-2 hours, then whip. Return to the freezer.

When it is half frozen again, whip and add chocolate (grated on a coarse grater or broken into small pieces). Return to the freezer and leave until firm, preferably overnight. Transfer to the refrigerator for 30 minutes.
