Pancakes with holes

Excellent pancakes with holes are obtained in two cases. The first is if you saturate the dough with soda, acid and, as a result, carbon dioxide (see the recipe with kefir above). The second is if you add fresh yeast to them. We have cooked this recipe many times , and each time the holes turned out outstanding. This particular recipe was given to us by the chef of the Ruski restaurant Alexander Volkov-Medvedev - his interesting story is attached to the recipe.

Heat the milk to 34 degrees.
- Milk: 1 l

Mix warm milk with sugar and yeast.
- Milk: 1 l
- Sugar: 150 g
- Fresh yeast: 7 g

Add eggs, salt, flour.
- Chicken egg: 4 pieces
- Salt: 17 g
- Wheat flour: 400 g

Mix the dough with an immersion blender. If you don't have a blender, mix the dough with a whisk and then strain it through a sieve to get rid of lumps.

Cover the dough with plastic wrap and leave it at room temperature for 2 hours. It will rise and become filled with bubbles.

Heat the pan well and grease it with a thin layer of vegetable oil.
- Vegetable oil: 100 ml

Pour the batter into the hot skillet.

Fry until golden brown, no more than 1 minute.

Then flip the pancake and fry for another 20-30 seconds.

Thus, fry all the dough, greasing the pan with oil each time.
