Fried Pea Pies

These pies are especially loved by those who spent their childhood in the southern regions. They have the simplest filling: the peas are to be turned into a thick porridge, seasoned with fried onions. But you won't be able to cook them spontaneously: the peas need to stand overnight in water. Our recipe is the base, but you can also add some herbs or spices to the filling, giving the pie either a Mediterranean, Caucasian, or Asian accent.

Prepare all the ingredients.

Rinse the dry peas and soak them in water overnight.
- Yellow peas: 400 g

Combine yeast and 1 tablespoon of sugar in a bowl. Pour in a small amount of warm water and let it sit for 5 minutes.
- Dry yeast: 5 g
- Sugar: 2 tablespoons
- Water: 500 ml

In a large bowl, combine the remaining warm water, 1 teaspoon of salt, the remaining sugar, and 5 tablespoons of oil. Add the yeast mixture. Mix thoroughly.
- Water: 500 ml
- Salt: to taste
- Sugar: 2 tablespoons
- Vegetable oil: 75 ml

Gradually add flour to the bowl. Add 1 cup at a time, then mix thoroughly. Or trust this job to a dough mixer. If the dough doesn't form a ball, add another 2 tablespoons of flour.
- Wheat flour: 670 g

Place the prepared dough in a bowl greased with oil. Cover with plastic wrap.

Place the dough in a warm place for 1-1.5 hours; it should double in size. Then knead it and let it rise again for another 0.5 hours.

While the dough is rising, prepare the filling. Rinse the soaked peas, place them in a pot, add water, salt, and cook until done.
- Yellow peas: 400 g

Chop the onion into small cubes and fry in a pan until golden.
- Onion: 3 heads

Drain the cooked peas in a sieve to remove excess water.

Mash the peas using a masher or blender, only on low speed.

Add onion, salt, and pepper to taste.

Divide the dough into balls of the same size. Cover the balls with plastic wrap and let them rest for 10 minutes.

Roll out the balls, place filling in the center of each, and shape into pies.

Fry the pies in a large amount of boiling refined oil.

Place the ready pastries on a napkin to remove excess fat.
