Babka with sugar and cinnamon is a fragrant and tender yeast pie that comes from Eastern European baking traditions. Add milk and eggs, yeast, sugar, flour, and salt to the mixer bowl and start mixing at the minimum speed.
- Milk: 200 ml
- Chicken egg: 80 g
- Fresh yeast: 15 g
- Sugar: 80 g
- Wheat flour: 500 g
- Salt: 8 g

Once all the ingredients are combined, increase the mixer speed and knead for 7-8 minutes.

Then gradually add 100 grams of cool, but not icy butter in small pieces. Add the next piece only when the previous one has melted into the dough.
- Butter: 150 g

Transfer the dough to a clean bowl, cover with plastic wrap, and place in a warm spot for 45 minutes.

After 45 minutes, knead the dough on a floured table and let it rise again for 40-45 minutes.

Then knead the dough again and let it rise in a warm place for another 20-25 minutes.

Roll out the dough into a rectangle 5–7 mm thick, with a ratio of 3:4.

Spread softened butter on the dough, leaving 1.5 cm from one short edge where it will be sealed.
- Butter: 150 g

Mix brown sugar with cinnamon and spread it along the edge of the dough.
- Brown sugar: 100 g
- Ground cinnamon: 10 g

Distribute the raisins in the dough.
- Raisin: 50 g

Wrap the dough tightly into a roll and place it seam side up.

Cut the roll from the center to the edge with a sharp knife. Turn the cut halves with the cut side up and twist them into a spiral. Then cut the second half of the roll in the same way and twist it into a spiral.

Send the grandma to a warm place for 50-60 minutes.

Send the prepared pie to a preheated oven at 170–180 degrees for 25–30 minutes.
