Jam pie is a classic Russian treat infused with the warmth of home. Its roots go back to village traditions where housewives created fragrant pastries from available ingredients. The crispy yet tender dough, combining butter and flour, creates an airy base, while the cottage cheese filling adds softness and a hint of tartness. Blackcurrant jam brings rich berry sweetness and exquisite aroma, turning a simple pie into a true gastronomic delight. This dessert is perfect for family tea gatherings and can be enjoyed warm or chilled.

1
Prepare all the ingredients. Take the butter out of the fridge in advance to let it soften.

2
Sift the flour into a large bowl or mixer bowl. Add diced butter and knead the dough.
- Wheat flour: 300 g
- Butter: 100 g

3
When the dough turns into crumbs, add 70 grams of sugar, baking powder, and 1 egg.
- Sugar: 120 g
- Baking powder: 10 g
- Chicken egg: 3 pieces

4
Gradually, add water one spoon at a time and knead the dough. It should start to form a dense lump.
- Water: 3 tablespoons

5
Separate about a third of the prepared dough, roll both parts into balls, wrap in film, and place in the freezer for 1 hour.

6
Prepare the filling. In a bowl, combine 2 eggs, cottage cheese, remaining sugar, and vanilla sugar. Blend until smooth without lumps.
- Chicken egg: 3 pieces
- Cottage cheese 9%: 350 g
- Sugar: 120 g
- Vanilla sugar: 1 teaspoon

7
Add semolina and mix everything thoroughly again.
- Semolina: 1 tablespoon

8
Take a large piece of dough from the freezer, remove the film, grate it into a baking dish, and level the layer of shavings.

9
Spread the cottage cheese filling on top, smooth it out, and send the pie to a preheated oven at 180 degrees for 15 minutes to set the cheese.

10
Spread the jam over the cottage cheese and distribute it with a spoon across the entire surface.
- Blackcurrant jam: 250 g

11
Evenly spread the remaining dough on top.

12
Bake for another 20 minutes until the dough is golden brown on top. Let the pie cool completely before serving, otherwise it may crack and the filling may leak.
