Diet cake in a pan is the perfect combination of simplicity and health benefits. This airy dessert, inspired by European culinary traditions, is made without an oven, making it accessible to everyone. The base of the cake consists of tender oatmeal layers with a rich cocoa flavor, soaked in a light mascarpone and soft cottage cheese cream. With no sugar and the use of healthy ingredients, it is suitable even for those watching their figure. The presentation is adorned with fresh berries or chocolate glaze, adding a special elegance. This cake is an excellent option for a healthy treat with tea, maintaining a balance between delicate texture and rich flavor.

1
Whisk together eggs, sugar substitute, kefir, baking powder, cocoa, and crushed oats until smooth.
- Chicken egg: 3 pieces
- Kefir: 180 ml
- Sugar substitute: 10 g
- Cocoa: 40 g
- Oat flakes: 80 g
- Baking powder: 10 g
2
Grease a non-stick pan with a drop of oil. Heat it up and reduce the heat (slightly below medium). Bake small pancakes on both sides. The finished pancakes can be leveled with a knife.
3
For the cream, beat the remaining ingredients (cheese and soft cottage cheese should be cold) with a mixer. You can add a pinch of vanilla and sugar. The consistency of the cream should not be too thick, moderately dense. If the cream is too thick, you can add a bit more soft cottage cheese or sour cream.
- Mascarpone cheese: 500 g
- Soft cottage cheese: 150 g
- Vanillin: pinch
4
Assemble the cake by alternating cooled layers and cream. Smooth the sides with the remaining cream.
5
The top of the cake can be filled with cream. Optionally, the cake can be decorated with berries or drizzled with chocolate.
