Anke's Pie

This recipe was given to the Tolstoys by Dr. Anke, who was a friend and colleague of Sofya Andreyevna's father. The family cooked it regularly, for all holidays. In fact, it is an ordinary lemon tart, there is nothing unique about it

Mix flour with 200 grams of butter and 100 grams of sugar until it resembles wet sand.
- Wheat flour: 400 g
- Butter: 300 g
- Sugar: 300 g

Transfer this mass to the mixer bowl, add 3 yolks, and start kneading the dough.
- Egg yolk: 3 pieces

Add 50 ml of ice water and continue mixing the dough.
- Water: 50 ml

The dough should come together and pull away from the sides of the bowl.

Wrap the dough in plastic wrap and refrigerate for an hour.

Beat 100 grams of room temperature butter with eggs in a saucepan.
- Butter: 300 g
- Chicken egg: 2 pieces

Add 200 grams of sugar and the zest of two lemons.
- Sugar: 300 g
- Lemon: 3 pieces

Squeeze the juice from all three lemons and add it to the saucepan.
- Lemon: 3 pieces

Place the saucepan on the heat and, constantly stirring with a whisk, bring to the thickness of honey.

Divide the dough in half, roll out one part. The second half can be frozen for next time.

Place the rolled dough in a baking dish.

Cover with baking paper and place a weight on it, dry beans work best as a weight. Send the form to an oven preheated to 200 degrees for 30 minutes.

Remove the paper with the weight from the baked crust and pour in the lemon cream.

Return the pie to the oven for another 30 minutes or until the filling is set. If the edges of the crust start to burn, cover the pan with foil.

Let the pie cool completely before slicing and serving it with tea.
