Rachel's Meat Trifle

Preheat the oven to 180 degrees. Line the baking tray with parchment paper and place a rack at the top of the oven.

Lay the bacon on the rack horizontally. Evenly sprinkle with brown sugar. Bake for about 20 minutes until the bacon is crispy and glazed. Remove from the oven and set aside.
- Smoked bacon: 6 pieces
- Brown sugar: 65 g

In a large bowl, using a mixer, whip the cream on medium or high speed until stiff peaks form for 5 minutes.
- Cream 35%: 480 ml

Gently fold the lemon curd into the whipped cream with a silicone spatula.
- Lemon cream: 600 g

In a dessert cup, layer first the sponge cake cut into 5 cm squares, then a spoon of jam, berries, and whipped cream with lemon curd.
- Biscuit: 900 g
- Strawberry: 1 glass
- Blackberry jam: to taste
- Blackberry: to taste

Repeat so that the final layer is whipped cream with lemon curd. Cut the candied bacon into small pieces and sprinkle it over the trifle.
