Pancakes with Japanese matcha tea and strawberries

Add a little matcha tea to anything, and the dish will immediately acquire a Japanese character. A little matcha - and the pancakes turn green, and when strawberries appear, the picture on the plate becomes very colorful and juicy . Recipe from Maxim Fomenkov, chef of the restaurant "Uzory".

In a bowl, mix flour, matcha tea powder, sugar, and salt. Mix everything well.
- Wheat flour: 180 g
- Matcha: 25 g
- Sugar: 60 g
- Salt: 2 g

In another bowl, mix milk and eggs, whisk the mixture.
- Milk: 950 ml

Combine both mixtures, whisking to break up lumps. Then add 5 ml of vegetable oil and mix. Strain the batter through a sieve for a smooth consistency.

Fry pancakes in a preheated medium-sized skillet greased with oil.

Fold the ready pancakes into triangles and decorate with sliced strawberries. Serve with raspberry sauce, sour cream, and condensed milk.
