The miller's pie is a cozy dessert that transports us to a village house on the edge of Estonian fields. Its history is closely tied to traditional baking, where simple, accessible ingredients turn into a fragrant wonder. The delicate dough made from grain flakes creates a crispy base, while the filling of sweet apples, cottage cheese, and sour cream adds softness and richness of flavor to the pie. A subtle cinnamon note adds spicy warmth. The pie is perfect for cozy family evenings and can be served warm or chilled with a cup of aromatic tea or coffee. Due to its simplicity in preparation and harmony of flavors, it becomes a favorite treat for home baking enthusiasts.
