Barley bread

Barley bread is an ancient dish of Estonian cuisine with a rich, slightly nutty flavor and a gentle tang. It is based on barley and whole grain flour, giving the bread a dense structure and rich aroma. Yogurt and cottage cheese make the dough soft, while honey adds a subtle sweetness. This bread pairs perfectly with butters, cheeses, and honey, and is also great with thick soups and stews. In Estonia, it is valued for its naturalness and nutrition, while baking it using an old recipe preserves ancestral traditions. The preparation does not require yeast, making the process quick and convenient.
